Wine description

Merlot by Paraschos winery is a genuine red wine from Collio. It's produced since 2004 when Paraschos made the first harvest of merlot vineyards, planted in 2001 in Sant'Andrea, grafted with 90 old vines from the same village.

Tasting Notes

Color: intense ruby red. Scent: intense and complex notes of small red fruits, spices, underbrush and red flowers. Taste: fresh, full-bodied with a long persistence

Vinification

Alcoholic fermentation with indigenous yeasts in Slavonian oak vats with maceration on the skins for 28 days, without adding sulphites and without filtrations.

Ageing

Aging in big Slavonian oak barrels and smaller french oak tonneaux and barriques for minimum 24 months and steel tank. Bottling by free fall with no filtration and no additives.
