Wine description
The Zymé's Metodo Classico Brut is a sparkling white wine produced with 100% Pinot Noir grapes using the traditional method. Celestino Gaspari, owner and oenologist of the Zymé winery, decided to make his own wine after have been working for Giuseppe Quintarelli for 10 years. This Metodo Classico Brut thanks to its characteristics is perfectly paired with shellfish, fish courses and vegetable preparations.
Tasting Notes
Color: pale yellow with greenish highlights Scent: spring wildflowers, acacia honey, yeast, mixed nuts and liquorice Taste: savoury, dry, with a fine perlage. Notes of fresh-baked bread, yeast and liquorice.
Vinification
After the manual harvesting at the end of August, the clusters are pressed and the must separated, then it is gravity settled at 7/8°C for 48hours, and fermented with cultured yeasts at a controlled temperature. In the following spring cane sugar and new yeasts are added to the wine, and it goes to a secondary fermentation in the bottle, according to the classic method.
Ageing
The wine rests on the lees for 4 years, then is disgorged and topped up with the same wine.
