Not 2013 Paraschos

Wine description

Not by Paraschos winery is white wine made with Pinot Grigio grapes using old style artisanal methods. It's a great expression of Collio Friulano (Friuli Venezia Giulia). A wine with a structured and complex bouquet that expresses the natural fruit without any correction.

Tasting Notes

Color: amber yellow with pink tints. Scent: dried fruit, acacia honey, caramel, candied citrus fruits and mineral notes. Taste: sharp, elegant with fine minerality and incredible lightness

Vinification

Grapes are destalked and left with their skins in big open-topped vats for 8 days with their skins, wild yeasts and no refrigeration. The contact with the skins immediately gives the wine a very intense color, which can vary from dark amber to intense pink.

Ageing

Aging in big Slavonian oak casks with the fine lees for two years. During the first months the lees are moved up with batonnage. Bottling by free fall without sulphites addition and no filtration.
