Not Tonight Josephine is one of Savage's most unconventional and intriguing wines. Made from dried Chenin Blanc grown on sandstone soils, the grapes remain on their skins as whole clusters for five days before fermentation is initiated by foot stomping. At just 8% alcohol, it offers a remarkably fresh and energetic interpretation of Chenin Blanc. Aromas of dried apricot and delicate honeyed flowers lead into a palate driven by vibrant, tangy acidity. Light, characterful and full of personality, this is a wine that challenges expectations while remaining incredibly drinkable.
