Vinification

The grapes, coming from two vineyards of different altitudes and soils, are harvested separately according to their maturation. The most ripe grapes are macerated for a few days in whole bunch, while the rest is pressed immediately after harvesting.

Ageing

Then they are blended and racked to 500 litres french oak tonneaux and left with the fine lees for minimum 18 months.
