Wine description

This passito wine is produced only in the most auspicious vintages, reflecting the tradition of white Passito in Valpolicella and nearby Soave area in Verona province of Veneto. The sweetness is largely balanced by the freshness and the complexity of this special wine, showing a great drinkability.

Tasting Notes

Pale yellow, with greenish highlights; deepens with ageing, tending to gold. Palate is sweet and savoury at the same time, with impressions of herbs, apple and pear, honey; long-lingering, with a vein of minerality that balances all of its components.

Vinification

After a natural drying of the clusters on trays for a minimum of 4 months, themust is separated, gravity-settled and fermented.

Ageing

The wine ages in small, 100-litre casks for a minimum of 3 years with neither racking nor topping-up. Before bottling, it is given a 1 mc microfiltration.
