Wine description
The Zymé's Valpolicella Classico Superiore is a dry red wine produced with a blend of 40% Corvina, 30% Corvinone, 25% Rondinella, 5% Oseleta grapes, coming from the vineyard in Negrar and Sant'Ambrogio di Valpolicella. Celestino Gaspari, Zymé winery owner and oenologist, decided to start making his own wine after have been working for Giuseppe Quintarelli for 10 years. This wine is in constant evolution and this philosophy is described by an incomplete "Valpolicella" word on the label, that represents the humility and respect of the oenologist while approaching this great classic, whose quality level must be constantly refined and improved.
Tasting Notes
Color: ruby red, tending to garnet Scent: notes of ripe cherry and semi-dried plum Taste: smooth with a good sapidity and notes of ripe fruit and spices.
Vinification
The grapes are harvested by hands and they go through two fermentations, one in September-October at natural temperatures and the second one, for about 15 days, on the skins of Amarone grapes in accordance with the classic Ripasso tradition.
Ageing
At least 2 years in large Slavonian ovals oak, followed by 6 months in the bottle.
