Wine description

The Cascina Baricchi's Visages de Canailles is a Sparkling Brut Rosé wine produced with 100% Nebbiolo grapes using the traditional method. The wine undergoes a long fermentation and rests in bottle, on the lees, for 24 months before the dégorgement. Visages de Canailles perfectly pairs with cured meat, seafood, smoked salmon. A must try with caviar.

Tasting Notes

Deep pink color, with fine and persistent perlage. The nose has intense notes of small red fruits, liquorice and aromatic herbs. In the mouth, it's rich and round, supported by a beautiful acid shoulder. Persistent finish, soft and harmonious.

Vinification

Fermentation at a controlled temperature of –4 °C in a stainless steel tanks for 8 months.

Ageing

Part of wine is placed in wooden barrels to be used in small percentages in the following years and another part is be used in cuvée to obtain the base for the refermentation in the bottle. The wine rest in bottle, on the lees, for 24 months before the dégorgement.
