Wine description

The Abbazia di Novacella's Sylvaner is produced by Augustinian monks who run the Abbey from immemorial time. They use only the grapes coming from the owned vineyard located in the heart of Italian region of South Tyrol. This wine perfectly represents a terroir rich of history, where the Sylvaner is a symbol of immortal traditions.

Tasting Notes

Colour: straw yellow with greenish reflections Scent: hints of medical erbs and wildflowers, ripe pear and melon Taste: juicy on the palate, smooth and crisp, with excellent structure and good acidity.

Vinification

Harvested in early October. Fermentation and maturation in stainless steel tanks at controlled teperature of 20° C. A small part is fermented in 30 hl oak casks.

Ageing

6 months in steel tanks.
